Sushi and Sashimi Dictionary


This section provides a list of the types of fish you may see at your local restaurant. We’ll continually add new items to this list as we become aware of them, as well as photographs, so you can identify what you’re eating. Note: Some of the fish names are written in katakana, the modern way of writing the fish’s name.

Types of Sushi Rolls
Name Kanji/Hiragana Description
Bara sushi ばら すし Sushi rice and ingredients mixed together, as a rice salad.
Chirashi sushi (Iso-don, gomoku sushi) 散らし寿司 / ちらしずし Sushi rice bed under other ingredients.
Funamori (Gunkan maki, kakomi sushi) Nigiri sushi wrapped to hold in less solid ingredients.
Futomaki 太巻 / ふとまき A thick sushi roll whose basic ingredients include egg, kanpyō, shiitake mushrooms.  There are other types of futomaki which include other types of vegetables and unagi or anago.

Fukusa sushi A type of sushi whose contents of rice are wrapped in a crepe.  It resembles the shape of nikuman.
Inari sushi 稲荷寿司 / いなりずし Aburage stuffed with sushi rice.
Make sushi 巻け寿司 /
まけずし
Nori seaweed and a layer of rice around a core of fillings.
Norimake 乗り巻け / のりまけ A roll with nori seaweed on the outside.
Nigiri sushi 握り寿司 / にぎりずし A slice of fish or other topping atop vinegared rice.
Okonomi-zushi お好み寿司 / おこのみずし Home-style nigiri sushi.

Balls made with plain steamed rice with various stuffings.
Oshizushi 押し寿司 /

Sushi rice and other ingredients pressed into a box or mold
Tazuna sushi (Rainbow roll) A roll with diagonal strips of food across the top.

Hand rolls, usually cone-shaped.

Hirame 平目 / ヒラメ Halibut.

Kohada こはだ Gizzard shad.
Koi 鯉 / こい Saltwater carp.
Kurodai 黒鯛 / クロダイ Snapper/black sea bream.
Madai 真鯛 / まだい Red seabream.
Maguro マグロ Tuna.
Masu 鱒 / マス Trout.
Mekajiki めかじき Blue marlin.
Mentaiko 明太子 / めんたいこ Cod roe.
Mirugai 見る貝 / みるがい Long neck clam.
Niika にいか Cooked Monterey squid.
Nijimasu 虹鱒 / ニジマス Rainbow trout.
Otoro 大とろ / オオトロ Fatty tuna (most expensive tuna sushi).
Saba 鯖 / サバ Mackeral.

Sanma 秋刀魚 / サンマ Pacific saury.
Sawagani 沢蟹 / さわがに Small crabs.
Sawara 鰆 / サワラ Sierra.
Sayori 細魚 / サヨリ (Springtime) halfbeak.
